Ham medallions with broccolI cream

Makes: 8 servings

Ingredients:

1 kg of roasted ham Sokołów Naturrino

20 grams of broccoli

½ tsp of

6 sheets of gelatin

1/4 teaspoon salt, white pepper, grated nutmeg, dried thyme and dried basil

3 tablespoons beef broth

1/4 l cream

4 cherry tomatoes

Preparation

Ham cut into slices approx. 1 cm thick. Wash broccoli, divide it into florets and cook steamed for 8-10 minutes. Soak the gelatin in cold water. Puree the broccoli, add salt, pepper, grated nutmeg, dried thyme and dried basil. Heat up the broth, strain the gelatin and melt it in the hot broth. Add liquid aspic to the blended broccoli. Whip the cream and add to the broccoli. Using the pastry piping bag decorate the medallions with broccoli cream. Decorate each medallion with half of tomato.
